One of the biggest challenges in creating baked desserts is that they are almost always served after a fleishig meal. Considering that most top notch desserts include dairy ingredients, that makes the choices either far more limited or far less tasty.

Not anymore, as Paula Shoyer's Kosher Baker fills this niche masterfully. In her book she has over 160 dairy free desserts that will make you forget you can't have milk after meat and you wouldn't even know the difference. Imagine a delicious world class Tiramisu after a fleishig meal! Imagine a delicious pareve bread pudding or chocolate babka. There is no stone Paula leaves unturned. You will find amazing recipes for cookies, muffins, pastries, fancy cakes, breads, tarts, and mousse.

The Kosher baker gives simple and clear instructions for each recipe. For additional benefit the book is broken down into three primary sections, quick and elegant desserts, two step desserts, and multiple step desserts. There is even a section for Pesach desserts and special desserts for the special needs and the health conscious. Its also loaded with tips, to not only give you good desserts but help you become an even better baker. The Kosher Baker does have the look and feel of a textbook without an over abundance of pictures and lots of text on each page. But that is precisely what it is, as Paula truly "wrote the book" on pareve desserts.

Paula's cookbook did materialize out of thin air. Paula is a graduate of Ritz Escoffier Ecole de Gastronomie Francaise in Paris. She is also the editor of a number of Susie Fishbein's Kosher by Design books. Paula own her own cooking school called Paula's Parisian Pasties in the Washington D.C. area.

In a list of her ten commandments of kosher baking Paula writes as the tenth and final commandment, "All desserts shall be worth the calories and so delicious you'll be content to eat only one piece." One thing we can say for sure, Paula's cookbook keeps the commandments!
