Introduction:The following is my favorite “capon” recipe , capon is a type of male chicken and is actually the wrong name for the cut of chicken used, which is the leg & thigh deboned. I do not know why it has become common to call it that (please e-mail me if you do!) but if your butcher looks at you funny just ask him to cut the leg and thigh off the bone! Another tip ,the smaller the “capon” the prettier and tastier they are!

Helpful Hints:Capons hardly ever dry out! This recipe comes out terrific every time and are soooo simple to make!
