Introduction:This recipe evolved from my experimenting with my grill pan. Now it is a mainstay on my Shabbos table.

Helpful Hints:Really, I like to grill it on med high as I live in Yerushalayim and don't have a smoke detector. Then it gets an amazing smokey flavor. However, I have had success on low without smoke. So for improved flavor try to grill as high as possible without your smoke detector going off e.g. try turning on your stove vents, open a window ETC. and ABSOLUTELY stand over it to see that it isn't smoking too much.
or try an outdoor grill on high.
(For pesach just leave out the cumin)
