Sushi, by definition, means rolled....but this is not. Instead, this recipe takes many of the ingredients normally found in some sushi, but saves you the labor by making it as a salad. I serve it frequently as a Shabbat Day appetizer.

Helpful Hints
-Prepare shortly before serving so the avocado will not turn
-Do NOT use sushi rice; it is too sticky. Any other rice, brown
or white, may be used.

If you don't have mango, I have substituted pineapple.
A few times I completely forgot to cook the rice (and I was serving it on Shabbat) so I took a rice cake and added a little bit of cold water to dissolve it and used that for the rice.

The proportions are up to you, depending on if you care about carbs, etc.
