Ingredients

Servings    recalculate
2 Medium Zucchini
2 Medium Carrots
1 Medium Potato
1 Medium Onion
3/4 tablespoon/s Salt
2 Eggs
1 cup/s Potato Starch
1 shake Oil
 
Preparation
Peel vegetables and grate in food processor. Mix all ingredients together. Grease a 9 x 13 baking pan and pour in the mixture. Bake at 350 for 1 1/2 hours.

Variation: fry mixture in frying pan as vegetable patties.
