Lemon Meringue Pavlova
My brother was home last week and his favorite dessert is Lemon Meringue pie. I didn't have time to make a pie but I wanted to make a lemon dessert for him. I decided to make lemon meringue pavlovas. This recipe has a lot of steps but it is not hard and it is worth the effort!
8 egg whites (save yolks for lemon curd)
2 cups white sugar
2 tsp cornstarch
2 tsp vanilla extract

Whipped Cream:
32 oz defrosted richs whip (you can use real whipping cream if you are not making this with a meat meal)
1 cup powdered sugar
1 tsp vanilla extract

Lemon Curd:
8 egg yolks
1 tsp lemon zest
1 cup white sugar
Pinch salt
1/2 cup lemon juice
1 stick (1/2 cup) margarine (cut into chunks)

Servings (pavlovas)   recalculate

where do u buy the richs whip in that large container??

I bought the rich's whip at my local Kosher market. I have seen smaller containers at my local Ralphs if you do not have a Kosher market close by. Enjoy the recipe!
