Every once in a while I need to streamline my Shabbos food prep. In the last two years I have been unable to do much in the kitchen so this was the default meal. It helps to have a crock pot, but an oven roasting pan will also work.

Helpful Hints
Some alterations to the dish: add sweet paprika at the end of the cooking cycle.
Crush the garlic and rub over the chicken instead of roasting it whole.
I put my whole crockpot on the blech before Shabbos.

what type of crock pot do you have?

Do you really bake this for total 6 hours? I would think this is a very long time. I do a similar recipe, but bake only for 1 1/2 hours and the chicken and veggies are moist and soft.
