This is a beautiful and elegant appetizer, perfect for Yom Tov or Rosh Hashana.
 
Ingredients

20 Large Fresh Mushrooms
Filling
3/4 pound/s Ground Meat
1 Egg Beaten
4 tablespoon/s Matza Meal
1/4 teaspoon/s Garlic Powder
1/4 teaspoon/s Onion Powder
Sauce
2 tablespoon/s Oil
1 Medium Onion
1 tablespoon/s Soy Sauce
1 tablespoon/s Onion Soup Mix
1 1/2 cup/s Water
 
Preparation
Remove the stems from the mushrooms carefully along with a little of the inside. Dice the stems and set aside the caps.
Filling: In a medium bowl combine the meat, egg, matzah meal and garlic and onion powder (you can add a squirt of ketchup).
Sauce: In a frying pan (with a cover) heat the oil. and saute the onion until clear. Add the soy sauce, onion soup mix, sliced stems and water. Saute for 2 minutes.
Fill each mushroom cap with a spoonful of ground meat mixture. Place the stuffed caps in the pan with the sauce. Cover the pan and simmer for 30-45 minutes.
 
Helpful Hints
Can use ground veal or chicken instead.
