These are really delicious and very easy to make. I made them for a friend who had a baby and she insisted I put the recipe up.

4 large carrots cooked and mashed
1 cup flour
1/2 cup dark brown sugar
1/2 cup white sugar
1 1/2 tsp. baking powder
1/2 cup of oil or apple sauce
1 tsp. vanilla
4 eggs
