Thai Spring Rolls
A welcome variation on Chinese egg rolls, these spring rolls are in a league of their own.
5-6 tablespoons canola oil, plus more for deep-frying
4 cups diced mushrooms
3 medium carrots, shredded
8 cloves garlic, diced
1 cup cilantro, stems removed
5 green onions, diced
1/2 package cellophane or mung bean noodles (about 4 oz) , soaked in warm water for 30 minutes and drained
1 cup raw chicken, diced or cut into strips
16 spring roll wrappers
