Rsti-style Potato Latke With Caramelized Onion
This no-fry latke pie is a gourmet, lower-fat version of the classic Chanukah treat. Take a peek at Temptations cookbook here
2 onions, divided oil
1 tablespoon brown sugar
3 large potatoes, peeled and grated
2 large eggs, lightly beaten
3 tablespoons matzo meal
1 heaping teaspoon salt
½ teaspoon pepper

hi. this receipe looks really good and i would love to try it but i dont have a oven proof saute pan. can i just do it in the oven or will it not work

It probably will not crisp up properly if done in the oven only. It is probably best to start in your saute pan and then transfer to an oven proof dish. (A bit more washing up, sorry)

We made this for Shabbos Chanukah since from past experience, latkes don't reheat well. This recipe worked well and the onions added a unique twist.
