Roasted Vegetable Tart

Adapted from Bon Appetite (love this magazine) it is great and cheesy with all the vegetables your kids wont eat otherwise.
It is perfect to bring to a shower or party and a great appetizer, side dish or main for a milchig meal.
Read fully to organize steps that can be done at the same time.
 
Ingredients
1 frozen pie crust, prepared according to directions and let cool completely.

Filling:
2 red bell peppers
11 tbsp oil, divided (I use Pam for the sauteing)
1 medium eggplant, cut into 1 inch cubes
kosher salt
pepper
1 small sweet potato, peeled, cut into 1/2 inch cubes
2 medium vine ripened tomatoes, cut into 8 wedges ( I leave this out because I don't like cooked tomatoes)
1 tbsp balsamic vinegar
2 small onions, thinly sliced
1 small fennel bulb, thinly sliced (I leave this out as well just because I dont usually have this on hand)
2 tsp thyme, divided
2 large eggs
3/4 c heavy cream
4 oz. ricotta OR cream cheese OR mascarpone OR farmers cheese ( the recipe really calls for goat cheese but I'm not really into it so one of these creamy cheeses is a good substitute. My family also likes mozzarella cheese mixed in.)

Helpful Hints
Vegetables can be prepared 1 day ahead. Cover separately and chill.

I like adding mushrooms to the onions.

You add sweet potato, but it isn't listed in ingredients; on the other hand sweet peppers are listed but never added, which do you mean? The only peppers in the preparation seem to be red bell peppers, please clarify. Also you said you don't use fennel but you said to add fennel onion, is it onion or fennel? They are not the same. Sorry to be a nudge but the recipe looks good so I appreciate your trouble.:>)

I have corrected the problems - thank you for bringing this to my attention. The fennel is part of the recipe so I added it to the instructions but you can leave it out like I do :) And it is no bother at all, please nudge me again if you have any difficulties!
