Baked Cheese Latkes
I saw this recipe in Ami magazine and was excited at the possibility of a good latke that is not fried. Although the results are different from our "normal" latkes, these are delicious.
3 cups farmer cheese
2 eggs
3 egg whites
1 cup gluten free (brown rice) flour
1/2 teaspoon pure vanilla extract
3/4 teaspoon salt
1/4 teaspoon baking powder
cinnamon sugar

Helpful Hints
Mine are sheHakol but with regular flour, these are Mezanos.

This looks intriguing...have you tried it using white wheat flour? I imagine that would change the results significantly...

I have only made this with gluten-free flour but I imagine it would work with any flour. Granted the texture will be different depending on what is used.
