Sfenz libyan Flour And Water Fritters
In my grandparents' house was my grandmother Malu What dominates in the kitchen cooking her always, of course, during the week but also at parties and on the Sabbath. My grandfather went into the kitchen from time to time almost exclusively for making coffee, however, except for a single, exceptional time of year: Channuccah.

A Channuccah my grandfather would get up early, sat in the kitchen and prepared sfenz, fritters of flour and water, just as it was in Tripoli: a dough quick and easy, a few hours of fermentation, a dip in hot oil and ... The world's most irresistible snack is ready.

You know the carnival fritters? Well, here they are: change the name, but the end result is just that.
