Another delicious chicken dish ready in around 20 minutes or so if you're organized. This one pairs chicken cutlets with a spicy (you can control the heat) tomato-olive sauce. Even my olive haters enjoyed it :). Serve over angel hair pasta along with a green salad for a quick and delicious dinner.
 
Ingredients
1 1/4 lbs chicken cutlets, cut into 1" cubes
2 T. olive oil
2 cups good quality pasta sauce
handful sliced green or black olives
1/4 tsp. crushed red pepper flakes

Helpful Hints
To cut down on prep time, you can saute the cutlets whole (instead of cutting them into pieces), though you'll have to add another few minutes to the cook time.
