While it is called a coffee cake, it could just as well be called a mocha cake. Easy preparation. For those who must have their chocolate fix, frost the cake and add chocolate chips / sprinkles on top, or just put some in the cake itself.
¼ c. instant coffee
¾ c. boiling water
2 c. sugar
1 c. oil
4 eggs
2 T vanilla sugar
2. c. flour
¼ c. cocoa or less
2 t. baking powder
1 t. coffee
2 ½ T boiling water
1 c. confectioners sugar
2 ½ T oil

Helpful Hints
I usually bake it in 2 long loafpans that I spray. I put the loafpans in a 9x13 baking pan to keep them balanced in the oven and prevent spilling.

Would it work to make this recipe into cupcakes? I'm doing a coffee theme for mishloach manos and was thinking of using this recipe.

I haven't tried it but I don't see why it wouldn't work. You may have to adjust the time it stays in the oven. Have a Freilichin Purim
