Creamy Butternut Squash Soup
I just made this huge batch for Purim (we are having 8 people over) so I had about 3 containers leftover for 2 people. I heated up some for Friday night and it was delicious, especially since it got condensed in the oven (to keep warm) and was half soup, half shmear for challah- yum!
2 tbsp oil
3 small onions, chopped
2 cloves garlic, minced
2 medium butternut squash, peeled and cut into chunks
2 large sweet potatoes, peeled and chunked
1-1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp pepper
about 8 cups water

Helpful Hints
**Use gloves when peeling butternut squash because it stains pretty badly.
**Since the butternut squash can be very hard to cut, I sometimes put into the microwave for a few minutes to soften so it is easier to peel and cut.
