Decadent Chocolate Ice Cream with Eggs-cooked
This ice cream is very rich, almost like a thick mousse, or fudge. I usually do not like ice cream made with eggs, because of salmonella, but the eggs are cooked in this recipe.
Perfect for Pesach or all year around!
4 eggs
3/4 cup sugar
1/2 cup oil
7/8 cup water
1/8 cup orange juice
3 oz chocolate chips

Helpful Hints
You can use 2/3 of 3.5 bar good quality bittersweet chocolate instead of the chocolate chips.
For those who don't use chocolate, use 3 tablespoons unsweetened cocoa plus 1 tablespoons sugar for 1 ounce semisweet chocolate.
I think you can get away with the 2nd reblending after it's frozen. I think last Pesach, we didn't have time to reblend, and the texture was just fine.
