SO much more elegant and easier to keep to portion controlled in order to eat the favorite lasagna.
 
Ingredients
12 whole-wheat or regular lasagna noodles
1 tablespoon extra-virgin olive oi
l3 cloves garlic, minced
1 14-ounce package ricotta cheese
3 cups chopped spinach, (if frozen: thawed and squeezed out)
1/2 cup shredded Parmesan cheese
2 tablespoons finely chopped Kalamata olives (optional)
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
1 25-ounce jar marinara sauce, preferably lower-sodium, divided
1/2 cup shredded part-skim mozzarella cheese

Helpful Hints
Can replace ricotta with crumbled tofu for a protein packed meal.
