Lemon Poppy Seed Muffins
There is a bagel store in Yerushalayim that sells great muffins. I am addicted to their lemon poppy seed muffin even though I am not a big fan of lemon or poppy seeds. I started feeling bad for my husband, so I decided to to try and duplicate their recipe so he doesn't always have to go out and get me some. I think these are great!

recipe looks really great. and different from the usual muffin ideas. how can i scrape the zest from the lemon without a "zester"?

I am not really sure. I have a microplane and I think it is a very worthwhile investment. I guess you could try the edge of a knife.

Can these muffins be made in advance and frozen? Should I freeze with the icing?

yes you can freeze them. I think with the icing is fine.
