This is a great anytime dish, relatively easy to prepare, great tastingand makes an easy presentation. Can be adapted with your choice of fillings however the specified one makes for a very filing entree
8 skinless ultra Trimmed chicken breasts ( 4 whole breasts cut in half along the verticle)
1/2 cup Craisins
1 cup basmati rice
1 1/2 cup water
1/2 cup orange juice
2 TBLS freshly growund corriander seeds
up to 2 cups Addti0nal water or Chicken Soup

Salt and pepper to taste

Helpful Hints
This dis also works well by using a large bug-checked leaf of Romaine lettuce to replace the non-existant skin. the stem part of the leaf would be at the bottom of the breast , and then rolled towards the top.This way would make a surprising substitution for stuffed cabbage.

serve with a green vegetabel just done sugar snap peas and a yellow vegetable like mashed yams for a balanced meal

This recipe is entitled "Lemon Stuffed Chicken" - where is the lemon the chicken is supposed to be stuffed with? It looks like a rice and fruit stuffing, not a lemon stuffing. Is this deliberate? I am confused.

I'm glad you asked that question. The chicken breast is stuffed- withthe rice craisin stuffing. The lemon which flavors the chicken comes from the ground corriander. If you were to try and flovor the chicken with lemon juice or sliced lemons as a marinade, the tast may overpower the chicken and the tast of the stuffing, and affect not only th ecooking times, but the tenderness of the chicken.
