This is I think the closest you can get to authentic Chinese rice. I net this will become your favorite. To speed up the cooking time you can use leftover rice. But even if u use raw u will be ready to eat it under an hour. Don't let the long list scare you away.
 
Ingredients
For the rice:
1 1/2 cups long grain rice ( or 3 cups cooked rice )

For the mushrooms:
3 tbsp cooking oil
1/2 pound cremini mushrooms, sliced
1/2 pound shiitake mushrooms, stems removed, caps sliced
1/2 pound white mushrooms, sliced
1/4 tsp red pepper flakes
1 tbsp grated fresh ginger
6 scallions sliced thin
1/2 tsp salt
1/4 cup soy sauce
1/2 cup frozen peas
1 tsp sesame oil
