Overstuffed Mashed Potatoes

This is a comfort food with a green vegetable inside. Since I have learned to love vegetables, I put them in almost everything. Broccoli is a natural in these potatoes although I am sure spinach would be delicious, as well.
 
Ingredients
4 small medium potatoes, cooked

1/2 red onion, rough chopped

1/2 cup vegetable broth

1/2 cup sour cream (light)

1 tablespoon olive oil

1/2 cup sour cream

1 cup chopped frozen broccoli, defrosted

1 cup shredded Cheddar cheese

2 teaspoons fresh chives

Helpful Hints
Next time, I make this, I plan to boil the potatoes. They will be softer and easier to rice or mash.

Why waste the potato skins? You can boil the potatoes whole, halve them, then scoop out the pulp. Continue with your recipe, but stuff the potatoes/broccoli/cheese filling back into the potato shells and then bake them.
