This has always been my job at my mother's house for Pesach, even after I was married. Since my parents recently installed a Pesach kitchen, we make batches and batches of these lukshen weeks in advance and freeze!
My nephew is a Celiac (cannot eat gluten/ wheat) so we make them whenever he comes, as well.
 
Ingredients
12 eggs
6 heaping tbsp potato starch
pinch of salt
1 cup water
