These are cruchy and melt in your mouth. Easy enough for kids to do on their own, freeing you up for more important things like sneaking a coffee break ;).
This recipe only uses egg whites. I've posted a cookie recipe that uses up the egg yolks which is also divine (Rich Pesach Nut Cookies).
-4 egg whites
-pinch salt
-1 cup sugar
-1 cup ground nuts- I like almonds

Helpful Hints
A variation which came about as a result of a mistake I once made in following the directions. Tastes like the filling of a pecan tart. Yum!:
After adding the nuts in step 2, beat the batter well until it becomes liquidy (in other words, goodbye meringues!). Spoon into a 9x13 pan and bake until brown and softly cruchy on top, around 45 min-1 hour. Let cool and cut into squares.
