This is my version of my mum's recipe, which was one of my favourites growing up - both to eat and cook. It was originally in a filo pastry case, but it's just as good without. The recipe uses only one egg, but I often use two or three to hold it together better and make it easier to slice and serve, as well as adding to its nutritional content. It's best accompanied by a tomato salad and either rice or a baked potato.
1kg spinach, wilted and drained
150g feta/Meitav salted farm cheese, crumbled
200g cream cheese
1 egg
1 onion, diced
1 clove garlic, minced/finely chopped
1/8 teaspoon freshly grated nutmeg
salt and pepper
