Itís Sunday night and nobody wants to eat leftovers. What are you going to do with all the chicken that nobody wants and that you know is still so good? My answer is reinventing the chicken so nobody will notice that itís really left over from Shabbat.

I figured BBQ sauce has the right smoky taste that pulled chicken needs and Ė voilŗ - a new recipe was born. A big hit at the table. I put the leftover pulled chicken on a fresh whole wheat roll for my husbandís lunch.

My kids came up with the idea to put a tablespoonís worth of pulled chicken on a thinly-sliced roasted potato (see my next recipe) and serve it as hors díoeuvres.
 
Ingredients
3 cups of cooked chicken from chicken soup
1 teaspoon olive oil
1 onion diced
Salt and pepper
1 cup favorite BBQ sauce
