Another great recipe for Purim.
4 eggs
1 cup sugar
½ cup oil
3 Tbsp lemon juice
1 vanilla sugar
Rind of 1 lemon grated, opt.
4 ½-5 ½ cups flour
2 tsp baking powder

Helpful Hints
Choice of fillings: Apple or prune butter, strawberry, raspberry (with grated chocolate) or apricot preserves, cherry pie filling, mohn-poppy seed prepared filling, chocolate bits (!!!), cooked prune or apricot filling (recipes to follow)
Prune filling: ½ kilo pitted prunes – cook in a little water – just to cover. Cool. Place in food processor. Add approx. 1/3 cup ground or finely chopped walnuts, and 1 tsp cinnamon. Proceed as above.
Apricot filling: ½ kilo apricots – wash and check. Cook as prunes – with just a little water. Cool and process. No other ingredients necessary. Proceed as above.

Great recipe! Pareve, versatile, and works like a charm even for someone like me who has never done hamentashen before! Thank you very much! [Note there is a weird sign popping up instead of certain partial amounts on my computer, so I assumed 1/2 cup oil and it worked perfect]
