Serve with stir-fried vegetables or a big chopped salad with grilled meat or fish.
3/4 pound quinoa
1/4 cup olive oil
1 large onion, chopped
2 garlic cloves, minced
2 teaspoons cumin seeds
Salt and freshly ground pepper to taste
Chopped cilantro to garnish (optional)

Make sure you thoroughly rinse the quinoa before you cook it -- gets rid of any bitter taste!
