Ingredients
1 cup red quinoa
1 1/4 cups water
1/2 cup dried cranberries
Walnuts and slivered almonds roasted with agave and oil
1/2 mozzarella ball, cubed
3 stalks of celery, sliced thin
1 green apple, cubed
1 bunch of beets, peeled and cubed
2 sweet potatoes, peeled and cubed
1 red onion, cut in rounds
1 tablespoon balsamic vinegar

Dressing:
1/4 cup balsamic vinegar
1 tablespoon dijon mustard
1/4 cup olive oil
1/4 cup agave
1/2 lemon
1 clove garlic, crushed
1/2 teaspoon salt
1/4 teaspoon pepper

what is "red quinoa"? I have only seen it in a sort of 'yellow'/corn-colored color.

Isn't mozarella a cheese? How could this recipe be parve? In Israel, I don't think I've ever seen parve cheese.

mozarella is a cheese. the recipe can be made with or without the cheese. it will be pareve if you omit the cheese.
