When composing a salad, it's important to take into effect taste as well as visual appeal. A combination of colors and textures always guarantees a hit, so don't be afraid of experimenting! For this salad I'm giving general ingredients without amounts as it truly depends on how many you're serving, if you're serving it as a main or side salad, and your palate.
 
Ingredients
Mixed greens
dried apricots, chopped into small pieces
roasted almonds
kirby, scrubbed (not peeled) and sliced into rounds then halved
craisins or pomengranate arils
grilled chicken breast, cut into strips
DRESSING:
1 T. apricot preserves
1.5 T. mild vinegar (i.e rice vinegar)
1 tsp. spicy mustard
1/4 tsp. salt
1/4 tsp. black pepper
1/4 cup extra virgin olive oil
