There are probably thousands of versions of potato kugels, but this one is from my MIL and perfected by my son Yaki. It is a real winner!
 
Ingredients
1 bag yukon gold potatoes, peeled and slice lengthwise in quarters, and placed in a pot of cold water (important step)
1/2 Vidalia or other sweet onion, cut into pieces
6 eggs
2 tb salt
freshly cracked black pepper
3/4 cup canola oil

Helpful Hints
Using an immersion blender really assures your egg and oil are emulsified well, which is the key to the success of this kugel. I make this kugel every week. One week I was rushing to get things done and I thought I had mixed the eggs well only to see a portion on my guest's plate with a round piece of egg yolk cooked up within the kugel.. talk about embarrasing...!

Hi. It's a 5 lb bag of Yukon Gold potatoes and 2 Tablespoons of fine table salt. Hope this helps! :)
