Apple Crisp
The lemon zest and lemon juice adds brightness to the crisp and sets it apart from the standard apple crisp. This is seriously the best apple crisp ever. Serve it warm with vanilla ice cream. Lemon zest refers to the outer peel of the lemon, not including the white part/pith which is very bitter.
6 Apples (a mix of granny smith and Cortland apples works the best)
1-2 teaspoons lemon zest
1 tablespoon lemon juice
1/4 cup brown sugar
1/8 cup flour
1/8 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon pure vanilla extract
1/2 cup or 1 stick margarine
1/4 cup of brown sugar
1/2 cup white sugar
3/4 cup of flour
1/2 teaspoon cinnamon (optional)

I love trying new crisp recipes, but I never believe they will be any different. Well I was proven wrong. This is delicious and different. I served it as a side dish w/o the ice cream and I can only imagine that the ice cream takes it to another level.
