I have a very similar recipe from Rochel F. However, the cooking method varies. I find that no meat in Israel can be baked without getting it very tough. So, everything in my house is made pot-roast style.

There are various cuts here in Israel that are not tough. The french roast from Mataam CHofetz Chaim is an excellent choice and comes out especially soft and delicious.
