This recipe is from Claudia Roden's book, "The Book of Jewish Food". My very first cookbook was Ms. Roden's book on Middle Eastern cookery. From the very start I realized her recipes are "true". All the recipes I've made from her books have resulted in outstanding food. This recipe is part of our standard Shabbos table.

Helpful Hints
1. You can use all water or all oil instead of some from each.
2. Chili peppers vary in heat. Also, the very hot part of the pepper in in the seeds and white membrane. To lower the heat mack sure to remove the seeds and membrane. You might want to use gloves and the heat from the peppers does linger on the hands.
3. For red zhoug blend red chilies with 6 medium tomatoes. Add salt to taste.
