From the same frozen broccoli sale came this idea. I used part of a 2lb package for the knishes. The other part went into a broccoli pasta casserole.

Ingredients
3 cups cooked and drained frozen broccoli (Keep the water for the broccoli soup)
3 medium sized potatoes, cooked
1 medium size onion, chopped and fried till golden
onionsoup or parve chickensoup to taste (about 1 T)
2 eggwhites or 1 egg
breadcrumbs
oil for frying

Helpful Hints
You may need more oil for the frying, but I found out that I didn't need so much oil when I kept the flame low. (I use a ceramic frying pan which is absolutely great and much better than Teflon).
I think it is also possible to bake these patties in the oven, spraying the pan and maybe brushing a drop of oil on top. I didn't try it, but if you do and it works, let me know.
