Carrot - Sweet Potato Kugel
The only way to get my 2.5 year old son to eat anything is to make it into a muffin. This includes fruits and vegetables. When I saw this chocolate looking Kugel in a Yom Tov special magazine (dont remember which one) I was so happy. Hope your kids (and adults) enjoy!
3 (4oz) jars carrot baby food
3 (4 oz) jars sweet potato baby food
3/4 c honey
4 eggs
1 cup olive oil
2 cups flour
2 tsp baking powder
2 tsp baking soda
1.5 tsp cinnamon
1 tsp salt

It usually makes about 1.5- 2 trays of regular sized muffin tins.
