Ingredients
Any vegetables you like , cut into uniform strips, spray with olive oil on a foil baking dish, roast on 180 C for about 30 mins. I sprinkle with herbs de Provence, but you can sprinkle crushed garlic or make a drizzle of pesto mixed with olive oil , til it's tin and drizzle over vegetables, then roast. Veggies will be ready when edges become a little burnt. Serve at room temperature
