1 tablespoon extra-virgin olive oil
6 tablespoons unsalted butter
2 leeks (white and light green parts only), thinly sliced
2 cloves garlic, finely chopped ** (see prep tips below)
2 (10 ounce) packages frozen chopped broccoli, thawed
Salt and pepper
2 large eggs
16 ounces cheddar cheese, shredded (4 cups)
2 teaspoons Dijon mustard
10 ounce sheet phyllo dough, thawed

Helpful Hints
**To prepare Leeks: Cut off the root end and the tough green top.Halve the white part lengthwiseSoak the stalks in cold water for 10 minutes, then rinse to remove the grit.

* For a lighter approach, use a butter cooking spray between sheets of phyllo instead of the butter.
