I noticed you had these Zucchini Bites and thought your readers would enjoy the low carb version---delicious and almost free
 
Ingredients
1 large whole zucchini and/or eggplant, scrubbed well
1 egg
1 1/2 cups combined Almond/Walnut Flour (ground fine)
1 clove garlic, peeled and finely minced
1/2 cup grated low fat Romano or Parmesan cheese
2 tablespoons extra virgin olive oil
Non stick cooking spray
Salt and pepper

Helpful Hints
To make preparation easier; I whisk the egg in a deep bowl and toss in half the zucchini slices. Toss well to coat all the slices The nut/cheese mixture I place in a plastic bag and after the egg bath I drop the zucchini slices in to the bag and toss till coated and then into the hot pan—I do this in 2-3 times.

This recipe is equally delicious with eggplant!
