you can't get kosher mascarpone in australia so i had to make my own but it wasn't hard. make sure to use full fat cream cheese, cream and sour cream though.

Use good quality at least 70% cocoa dark chocolate.
You can make this 1-2 days in advance it gets better each day. I made it a week in advance, froze it and took it out the day before.
Try not to make more than 3 layers of biscuits as you want more cream mixture. If you haven't dipped biscuits for long enough you can sprinkle some of the coffee mixture over them before putting the cream layer.
