I absolutely adore tarte tatin and found this foolproof recipe for the apples in Rachel Allen's 'Bake'. I use my own gluten free scone base pastry instead of the recipe here (it's easier to make parev for a start), but for ease or speed, you can use store bought puff pastry.
For the sour cream shortcrust pastry
200 g plain flour, sifted
1 pinches salt
100 g butter, chilled and cubed
2 tbsp soured cream, or crčme fraîche

For the filling
4 eatingapples, GrannySmith or Golden Delicious; if using a small variety, such as Cox’s Orange Pippin, you will need about 6 apples
125 g caster sugar
100 ml water
25 g butter
1 egg, beaten

Helpful Hints
