White Chocolate Cranberry Bars
Always looking for interesting things to make for Shabbos, this recipe caught my eye. Be forewarned, this is very rich so cut small slices. My husband said it was a bit much but my kids loved it and so did my guests who kept asking for more. I did use cranberries in the dough and I think next time I would substitute almonds. I think it would be great with a strong cup of coffee. You can try making these dairy I am sure they would be out of this world.
For the Bars:
1/2 cup oil
1 large egg
1 cup light brown sugar
1 1/2 teaspoons vanilla extract
1 cup white whole wheat flour
1/4 teaspoon salt, optional and to taste
3/4 cup white chocolate chips
1/2 cup dried cranberries

For the Frosting and Topping:
1 cup white chocolate chips, melted and divided
4 ounces Tofutti cream cheese
3/4 teaspoon vanilla extract
2 cups+ confectioners' sugar (I used about 2 3/4 cups)
1/4 cup almonds
