This recipe is half adapted, half made up, and is finger-licking good. It is a little bit of a "potchke", so I reserve it for Yomim Tovim. It is especially good for Rosh Hashana, since it is sweet dish. You can garnish with slices of starfruit for a pretty touch.

You can adapt this recipe for Pesach, by substituting potato starch for flour.
 
Ingredients
1 chicken cut into 8ths, not including wings, with skin removed
1 cup flour/potato starch
1 tablespoon paprika
1 can crushed pineapple
1 cup pineapple juice
1/2 cup orange juice
oil for frying
Optional:
slices of starfruit

Helpful Hints
Can be made using chicken cutlets for a shorter cooking time.
Delicious served on rice. (On Pesach you can serve with mashed potatoes or chremslech)

Is the picture authentic? Also, wold it be possible to bake this dish in the oven to reduce calories and cooking time? If so what are your tips?

Perhaps you could spray a 9x13 pan with cooking spray, place your coated chicken pieces inside, broil for a few minutes, then turn over to the other side to broil. Pour the juices and crushed pineapple into your pan on top of the chicken, and bake for 1 1/2 hours. (turning over after 3/4 hour). I do not think baking will make the cooking time shorter- I would bake it a half hour longer! To reduce calories, rather spray your pot, and still cook it for the shortest cooking time.
