The trick to getting picky eaters to eat vegetable soup, is to make sure they don't see the vegetables. Use an immersion blender to blend the vegetables once they're cooked, which will also make your soup thicker. 6 medium potatoes, peeled & cut in quarters
half cup of barley
1 sweet potato, peeled and cut in half
2 medium carrots, peeled, or half bag baby carrots
1 medium zucchini, cut in quarters
1 medium parsnip, cpeeled & cut in half
1 medium onion
1/2 cup vegetable soup mix
optional:
1/2 small can of mushrooms

salt and pepper to taste

Helpful Hints
Another trick to get kids to eat vegetable soup, add alphbet noodles for the last 15 minutes. Then invite them to come eat ABC soup, and find their initials!

This recipe is also a good way to use up an open package of baby carrots that got a little dried out.
