While stuck at the dentist's office, I came across an old magazine. Of course I looked first at the recipes and I saw this beauty. Low fast and taste great, what more can you ask for? I guess something good came out of the visit.
 
Ingredients
Muffin:
1/2 cup + 2 tablespoons chocolate chips
1/3 cup soy milk
1 1/2 tablespoons oil
1 1/2 tablespoons applesauce
1 cup white whole wheat flour
1/4 cup cane sugar
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/3 cup chopped pecans
1 egg
pinch of salt
1/2 teaspoon vanilla

Streusel Topping:
3 tablespoons flour
3 tablespoons brown sugar
1/4 teaspoon cinnamon
1 tablespoon oil
3 tablespoons chopped pecans
