Chocolate Mud Cupcakes
mmm.....these are brownie style cupcakes that melt in the mouth. They only take 25 mins to bake giving you plenty of time to mix up the chocolate glaze.
1tbsp instant espresso coffee
60ml hot water
100g dark chocolate (3.53 oz)
80g margarine (2.82 oz)
2 eggs
60ml vegetable oil
40ml water (or milk = milky)
100g plain flour (3.52 oz)
Pinch of salt
½tsp baking powder
Pinch of bicarbonate of soda
190g caster sugar (6.70 oz)
25g cocoa powder (0.88 oz)
For the chocolate glaze:
100g icing sugar (3.52 oz)
20g cocoa powder (0.70 oz)
20ml water

Helpful Hints
You could transfer this mix into a large cake – all you need to do is bake it in a cake tin and keep an eye on it in the oven.

hi Kosher girl! caster sugar is fine sugar used for baking but if you don't have any, use regular. I will also convert to oz and cups

I spent a lot of time converting this recipe so that I could make it. This is what I came up with: Cupcake Mix: 60 ml=1/4c; 80 gr=1/3c;40 ml=2T+2t;100gr=7/8c or 14T; 190gr=1c; 25 gr=3T;20ml=4t. Glaze: 100gr icing sugar= 2 1/4c; 2T cocoa and 6 t water.
