The Absolute Best Potato Latkes
I am just packing up to go out of town for Shabbos Chanukah and I made these latkes for a side dish for supper before we leave. I couldn't get in the car without sharing this recipe with you because it is SO absolutely scrumptious! This time I added scallions for an extra zing and the taste is magnificent.
6 potatoes, peeled
1 small onion
3 eggs
1 tsp salt
1/4 tsp pepper
1/4 cup flour
1 tbsp oil
2 tsp baking powder
oil for frying

Helpful Hints
If I don't finish up the whole batter at once, I sometimes cover it up and put it in the refrigerator. You can either skim off the potatoes that turned dark or mix it up and then fry a new batch of fresh latkes.

Add a little bit of another (grated) colored vegetable. Today I added scallion. If you like, you can add carrots or red pepper. I love to make both latkes and kugels in my blender. The consistency is like a real heimishe latke/kugel.
