I found this recipe online and made modifications. It was AWESOME! It is a keeper recipe that in my opinion a must try. I hope you love it too! Posting with LOVE! <3
1 tablespoon olive oil
4 Chicken Leg Quarters
salt and ground black pepper to taste 1/4 cup loosely packed cilantro leaves 2 large sweet potatoes, cut into chunks 1 red bell pepper, cut into strips
2 (15.5 ounce) cans red beans, rinsed and drained
3/4 cup chicken broth
1/4 cup loosely packed cilantro leaves 16 oz. Medium salsa
2 teaspoons ground cumin
1/2 teaspoon ground allspice
3 large cloves garlic, chopped
lime wedges, for garnish (optional)

Helpful Hints
The original recipe called for black beans and skinless chicken thighs. I used leg quarters, red beans, medium instead of hot salsa and left the skin on because I love it and think its juicier that way. I also increased the salsa and broth in my recipe. Use your own judgement. Limes are not my thing so I left it off mine but left it in the recipe for you to choose. I also increased the cook time and left it on warm for Shabbos lunch so it was in the cooker over night. It was intensely good! I hope you enjoy! :)

What was the original amount of cooking time and broth?

The original called for 4 hours and 1/2 cup of broth and 1 cup of hot salsa. I had a lot of soup/sauce left over so I might reduce mine next time but I will stick with medium salsa. Many other people increased the broth and salsa too saying it. Let us know what you decide.
