This is a take-off on Brynie Greisman's recipe that appeared in Family First. Since I did not have duck sauce, made it myself.
1 chicken cut in eighths.
1 or 2 sliced onions
Duck Sauce:
1 cup water
1 teas. soy sauce
1 tbsp. apricot jam
1/2 cup light brown sugar
2 cloves minced fresh garlic
1/2 teas dry mustard

Helpful Hints
You may want to increase the duck sauce to make it more flavorful.

how long do you think the duck sauce would keep in a jar in the fridge? Can it be frozen in meal size amounts (imagine pulling out just the right amount)Thank you so much for the recipe.

I don't see any reason that this couldn't keep in the fridge for several days. Perhaps freezing it is the best solution. I have no experience with this, but the sauce is so easy to make, it could be made fresh each time. Hope you like the chicken - we do.
